Corn Flakes Chicken

We all know fried foods are bad for you. So why give fried foods to your kids? I am a health nut and I am very careful with my kids’ nutrition. I don’t let my kids eat fried foods, but I also don’t want them to feel deprived. Chicken tenders are big in the US, so this is my version: Corn Flakes Chicken which is baked and not lacking in taste or crunch. Your kids will love it. My mom used to make this for me with yellow rice and beans.

Ingredients
  

  • 6 chicken tenderloin
  • 1 cup Greek yoghurt
  • 2 cups Corn Flakes crushed
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • salt & pepper to taste

Instructions
 

  • In a pirex of salt and pepper, put the chicken and marinade in Greek yoghurt for at least an hour in the fridge.
  • In another rectangular pirex crush up the cereal and add the cumin & paprika.
  • Mix well.
  • Using tongs to cover the chicken in corn flakes mix and make sure it’s covered on all sides.
  • Bake in oven at 350F for 20 to 25 minutes.

Notes

Enjoy with blanched greens beans or mashed potatoes.
