Charapa Eggs with Bacon

What is your favorite meal? Breakfast is my favorite meal of the day. I named this sandwich “Charapa eggs with bacon”. The term Charapa refers to Peruvians that are from the Amazon. Their cuisine is called "cocina selvativa" Amazonian cuisine using local ingredients. On leisurely weekend mornings when I have time to make an indulgent breakfast this is what I crave. Happiness in a Peruvian bite.

Ingredients
  

  • Poached eggs
  • Plantains
  • Crispy bacon
  • Avocado
  • Yucca bread

Instructions
 

  • How to poach eggs?
    1. Bring a large pot of water to a boil, then reduce to low. Crack the egg in a fine mesh sieve (over a small bowl) and remove the whites.
    2. Transfer the egg to a small bowl. Add one tablespoon of vinegar and stir in a circular motion to create a vortex.
    3. Pour the bowl with the egg into the middle of the vortex and for 3 minutes.
    4. Use a slotted spoon to remove the poached egg. Dab with a paper towel to remove excess water and eat immediately. Salt peper to taste.
    5. Assemble the sandwhich and enjoy that runny yolk.
