Green Pasta (aka Tallarines Verdes)
As promised I'm sharing a recipe of one of my favorite Peruvian childhood dishes. My Mama used to make it for me growing up and now I make it for my daughters. Passing down my Peruvian culture and food is my way of keeping her memory alive.
Equipment
- blender
Ingredients
- ½ shallot
- 2 cups spinach
- 1 cup basil
- 2 garlic cloves
- ¾ cup evaporated milk
- ½ cup queso fresco
- ¼ cup wallnuts
- ¼ cup olive oil
- salt and pepper
Instructions
- Add all the ingredients to your blender.
- Blitz until you get a creamy, smooth texture.
- Cook pasta according to instructions on box.
- Mix well and sprinkle Parmesan cheese.
- Enjoy!
