Ají de Gallina

Chicken is one of those dishes that I would never order at a restaurant (boring) but I do like making it myself. Peruvians love to eat chicken and this Peruvian Spicy Creamed Chicken (Ají de Gallina) is a classic dish my mama use to make when I was little. It was her way of keeping us connected to her Latin culture. The torch has been passed. This dish is dreamy/creamy and takes a little time to make but so worth it.

Ingredients
  

  • pounds chicken (approx.)
  • 1 onion peeled and chopped
  • 1 carrot peeled and chopped
  • 1 celery chopped
  • 3 teaspoon aji panca (found at local Latin markets or Amazon)
  • 3 teaspoon aji mirasol (optional)
  • 3 tablespoon Peruvian green chili sauce
  • 1 cup grated Parmesan Cheese
  • 2 teaspoon oregano
  • 2 garlic cloves minced
  • ½ cup chopped pecans
  • 1 teaspoon ground cumin
  • ½ cup queso fresco
  • 1 cup milk
  • 2 cup soft bread crumbs (I soak mine in 1/2 cup of evaporated milk)
  • ½ cup EVOO
  • 2 bay leaves

Notes

Serving suggestion: Serve with a side of yellow potatoes, hard boiled eggs and black olives. It’s deep flavor will have you coming back for seconds.
