Peruvian Spicy Creamed Chicken
Ají de Gallina
Chicken is one of those dishes that I would never order at a restaurant (boring) but I do like making it myself. Peruvians love to eat chicken and this Peruvian Spicy Creamed Chicken (Ají de Gallina) is a classic dish my mama use to make when I was little. It was her way of keeping us connected to her Latin culture. The torch has been passed. This dish is dreamy/creamy and takes a little time to make but so worth it.
Ingredients
- 3½ pounds chicken (approx.)
- 1 onion peeled and chopped
- 1 carrot peeled and chopped
- 1 celery chopped
- 3 teaspoon aji panca (found at local Latin markets or Amazon)
- 3 teaspoon aji mirasol (optional)
- 3 tablespoon Peruvian green chili sauce
- 1 cup grated Parmesan Cheese
- 2 teaspoon oregano
- 2 garlic cloves minced
- ½ cup chopped pecans
- 1 teaspoon ground cumin
- ½ cup queso fresco
- 1 cup milk
- 2 cup soft bread crumbs (I soak mine in 1/2 cup of evaporated milk)
- ½ cup EVOO
- 2 bay leaves
Notes
Serving suggestion: Serve with a side of yellow potatoes, hard boiled eggs and black olives. It’s deep flavor will have you coming back for seconds.
