This is a perfect dinner for winter.

Lentil Stew on a Bed of Brown Rice

What’s your ultimate comfort food? Living in South Florida we have two seasons: hot and hotter. So happy to be enjoying a cold snap (60F yesterday) which calls for winter comfort food and for me that means lentil stew with carrots and tomatoes on a bed of brown rice.

Ingredients
  

  • 2 cup carrots (3 large carrots)
  • 1 tablespoon garlic minced, (3 cloves)
  • 1 can whole plum tomatoes
  • 1 cup lentils
  • 2 cup organic chicken broth
  • 2 teaspoon olive oil
  • ½ tablespoon apple cider
  • 2 teaspoon curry powder
  • 2 teaspoon kosher salt
  • ¼ teaspoon pepper

Instructions
 

  • Heat oil in a large saucepan.
  • Add onions and carrots and cook until tender and onions start to brown.
  • Add garlic and cook for a minute.
  • Add tomatoes, lentil, broth, and condiments.
  • Raise the heat to bring to a boil, then lower the heat and simmer for approximately an hour until the lentils are soft. Check lentils periodically.
  • Add apple cider, salt/pepper to taste & serve on a bed of brown rice.
