Lentil Stew with Carrots and Tomatoes
Lentil Stew on a Bed of Brown Rice
What’s your ultimate comfort food? Living in South Florida we have two seasons: hot and hotter. So happy to be enjoying a cold snap (60F yesterday) which calls for winter comfort food and for me that means lentil stew with carrots and tomatoes on a bed of brown rice.
Ingredients
- 2 cup carrots (3 large carrots)
- 1 tablespoon garlic minced, (3 cloves)
- 1 can whole plum tomatoes
- 1 cup lentils
- 2 cup organic chicken broth
- 2 teaspoon olive oil
- ½ tablespoon apple cider
- 2 teaspoon curry powder
- 2 teaspoon kosher salt
- ¼ teaspoon pepper
Instructions
- Heat oil in a large saucepan.
- Add onions and carrots and cook until tender and onions start to brown.
- Add garlic and cook for a minute.
- Add tomatoes, lentil, broth, and condiments.
- Raise the heat to bring to a boil, then lower the heat and simmer for approximately an hour until the lentils are soft. Check lentils periodically.
- Add apple cider, salt/pepper to taste & serve on a bed of brown rice.
