Peruvian Causa

Have you ever had Peruvian causa? It’s one my favorite Peruvian dishes. A causa is a traditional layered dish made of yellow mashed potatoes. It’s so versatile as you can layer it with crab, tuna or chicken. I was thrilled to find the elusive yellow potato at a local Colombian market in West Palm, Florida. It is a labor of love but so worth it.

Ingredients
  

  • 1 kilo yellow Peruvian potatoes or Yukon
  • 1 can tuna fish
  • 6 lemons
  • 3 tablespoon olive oil
  • 1 red onion chopped brunoise style
  • 2 avocados
  • 1/2 cup mayo
  • salt & pepper to taste

Notes

1. Boil potatoes until soft. Drain the potatoes, then pass them through a ricer. Cool the mashed potatoes to room temperature. Mix with salt, pepper, Aji Amarillo paste (traditional Peruvian chili paste medium heat), lemon juice and olive oil.
2. In a bowl mix together onions, tuna, mayonnaise, lemon juice, salt and pepper.
3. Place potato mixture in a round cookie cutter and layer in the avocado, tuna and top off with potato mixture.
4. Add ceviche on top with finely sliced red onions

    I bought 3 lbs of fresh ore cut cubed sweet potatoes in my grocery store. Can I put these in the oven, or would it it work as well in the recipe Janeczka Benn Ferren
