Blueberry Bread
Coldest day of the year: 60F here in South Florida. No better way to celebrate than turning my oven on and baking a delicious, vegan, zesty blueberry bread.
Ingredients
- ¾ cup oatmilk (or whatever milk you prefer)
- 3 tablespoon lemon juice
- 1 tablespoon lemon zest
- ¼ cup canola oil
- 2 tablespoon applesauce
- ½ cup sugar
- 2 cups all wheat flour (whatever flour you prefer)
- 2½ teaspoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1½ cups blueberries (I used frozen)
Instructions
- Preheat oven to 350F and grease a bread pan.
- In a large bowl combine milk, lemon juice and lemon zest. Add the oil, apple sauce, sugar and mix vigorously. Add in vanilla extract.
- Sift in the flour, baking powder, salt and stir until smooth. The batter will be thick! Fold in gently the blueberries and transfer to a bread pan.
- Bake for 50 to 55 minutes. A toothpick inserted in the middle should come out clean.
- Let it cool down in pan for 15 minutes. Enjoy!
