Blueberry Bread

Coldest day of the year: 60F here in South Florida. No better way to celebrate than turning my oven on and baking a delicious, vegan, zesty blueberry bread.

Ingredients
  

  • ¾ cup oatmilk (or whatever milk you prefer)
  • 3 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • ¼ cup canola oil
  • 2 tablespoon applesauce
  • ½ cup sugar
  • 2 cups all wheat flour (whatever flour you prefer)
  • teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • cups blueberries (I used frozen)

Instructions
 

  • Preheat oven to 350F and grease a bread pan.
  • In a large bowl combine milk, lemon juice and lemon zest. Add the oil, apple sauce, sugar and mix vigorously. Add in vanilla extract.
  • Sift in the flour, baking powder, salt and stir until smooth. The batter will be thick! Fold in gently the blueberries and transfer to a bread pan.
  • Bake for 50 to 55 minutes. A toothpick inserted in the middle should come out clean.
  • Let it cool down in pan for 15 minutes. Enjoy!
