Beef Stir Fry

Lomo saltado or beef stir fry is my ultimate comfort food. Whenever I am craving meat this iconic Peruvian dish brings me back to childhood. What is lomo saltado? It’s marinated strips of sirloin steak stir-fry with soy sauce, chopped red onion, tomatoes, crispy French fries and ají amarillo, served with rice on the side. Delicious and easy to make at home.

Ingredients
  

  • 18 oz sirloin steak cut into strips
  • 1 red onion chopped thick
  • 2 tomatoes quartered
  • 1 ají amarillo chili pepper sliced finely, veins and seeds removed
  • 1 teaspoon fresh garlic paste
  • 1 teaspoon olive oil
  • 1 cup white rice cooked
  • 6 potatoes cut thick
  • ½ cup beef stock
  • 4 tablespoon soy sauce
  • 4 teaspoon red vinegar
  • ¼ cup cilantro leaves
  • ¼ teaspoon ground oregano
  • 1 teaspoon black pepper
  • 1 teaspoon cumin ground
  • salt to taste

Instructions
 

  • Place sliced potatoes in basket of air fryer and cook at 400° for 10 minutes. Shake basket and stir potatoes and cook until potatoes are golden and tender for 8 to 10 minutes.
  • Cut the sirloin steak into strips. Make the marinade which consists of cumin, salt, vinegar, olive oil and soy sauce. Let it marinate for 10 minutes before cooking.
  • Bring a tablespoon of olive oil to a very high heat in the pan. Add the marinated steak strips and fry it until browned.
  • Add the onion, ají amarillo chilli pepper and the garlic paste. Fry for 1 minute whilst always moving the pan, add in the beef stock.
  • Add the tomato and fry the ingredients in the pan for 30 seconds. Finally add the oregano and French fries, tossing everything together for another 10 seconds.
  • Serve immediately with white or brown rice.
