After Eight Cookies
I loved After Eight Mints as a child and attempted to recreate these flavors in a cookie. These are fun to make with your minis and will infuse your kitchen with a wonderful aroma. The texture is chewy yet crunchy. Hope you make them.
Ingredients
- 1/2 cup coconut sugar
- 1 stick of room temperature butter
- 1 egg
- 1 cup flour
- 1 teaspoon vanilla extract
- 1/3 cup cocoa
- 1/2 teaspoon baking powder
- 1 cup semi sweet chocolate chips
Glaze
- 1/2 cup powdered sugar
- 2 tablespoons boiling water
- 1/4 tablespoon peppermint flavoring
- 1 tablespoon unsweetened cocoa powder, sifted
Notes
1. Preheat the oven to 350F.
2. Using a kitchen aid cream sugar and butter, add eggs and vanilla extract.
3. Mix the flour, cocoa and baking powder in a bowl. Gradually add in the creamed mixture. Gently fold in chocolate chips.
4. Using an ice cream scooper scoop out cookie dough onto a lined baking sheet. I love my Silpat. Make sure to leave a few inches between cookies.
5. Bake for 12 minutes and sit on a baking sheet before transferring them to a cooling rack.
6. Add glaze ingredients into a pot and heat. Let cool off.
7. Using a teaspoon drizzle glaze over cookies.
