Chocolate Cupcakes
These chocolate cupcakes are simple to make and low calorie (only 133 calories per cupcake). By subbing cocoa powder for chocolate, we are replacing saturated fat found in baking chocolate with polyunsaturated fat. The buttermilk gives it a nice moisture. My girls and I like to make these on Sunday for our weekly breakfast or school snack. Hope you try these at home.
Ingredients
- 1 1/4 cups all-purpose flour
- 2/3 cup coconut sugar
- 1/3 cup cocoa powder
- 1 teaspoon baking soda
- 1 egg
- 2 egg whites
- 1 cup buttermilk (or plain yogurt, sour cream, kefir)
- 1/4 cup oil
Notes
1. Combine flour, sugar, cocoa powder and baking soda in a bowl.
2. Add egg, egg whites, buttermilk and oil. Mix in kitchen aid for about 1 minute.
3. Line your muffin pan with liners and spray with cooking spray. Add batter to the cups using an ice cream scooper. Cups should be 2/3 full.
4. Bake at 350F for 18 to 20 minutes, or until a toothpick inserted in the middle comes out clean.
