Peruvian Mac & Cheese / Huancaina Macaroni

When it comes to mac & cheese, buying quality cheese is key. My kids love mac & cheese and I wanted to make this dish with a Peruvian twist. Hence I created the huancaina mac & cheese. The huancaina sauce gives this dish a hint of spicy, but not too much for my kids to handle.

Ingredients
  

  • 1 lb dried macaroni 
  • 1/2 cup huancaina Sauce
  • 1 large mozzarella ball
  • 1 cup swiss cheese (any cheese you like)
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1/2 cup grated pecorino cheese
  • salt

Notes

1. Bring a large pot of water to a boil and add salt. Pour in the pasta and cook according to instructions on the box until al dente.
2. Preheat your broiler to 500F.
3. In a saucepan add Huancaina sauce with the cream and heat gently. 
4. Drain the pasta and add it to the warm Huancaina sauce. Mix well and add into a square casserole dish.
5. Sprinkle over the cheese and drizzle with olive oil. Pop-under the broiler for 8 minutes until the top is golden brown and bubbling.

    Like all other kids, my son loves mac and cheese and he requests it so OFTEN that i’ve become bored of making it. This looks like a great alternative, and it’s helpful to know that your little girls take take the amount of heat in the recipe. Would you mind sharing how to make your Hunancaina sauce?
