A Stack of Love. I grew up in Brussels and waffles are our peanut butter jelly sandwich. They bring me back to childhood and I wanted to create healthy yet crispy dark chocolate waffles for my daughters.

Equipment

  • waffle maker

Ingredients
  

  • 2 cups almond milk
  • cups cups all-purpose flour
  • 1 tablespoon apple cider
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup water
  • 3 tablespoon olive oil
  • ¼ cup unsweetened coco powder
  • 3 tablespoon liquid sweetener
  • 1 teaspoon vanilla extract
  • ¾ cup rolled oats
  • ½ cup dark chocolate chips

Instructions
 

  • In a bowl, add milk & apple cider. Let curdle.
  • In another bowl add flour, baking powder and salt.
  • Add liquid ingredients (milk, coco powder, water, oil, liquid sweetener and vanilla).
  • Fold with spatula until just combined.
  • Fold in the oats and chocolate chips.
  • Preheat a waffle maker and spray with cooking oil.
  • Use an ice cream scoop to add batter in the middle of your waffle maker.
  • Cook for approximately 2 minutes.
  • Add syrup, berries, jam or chocolate spread.
