Pumpkin & Nut Butter Cupcakes
Smells Like Halloween Spirit. The perfect marriage of pumpkin purée & nut butter. These muffins are moist and so delicious. Recipe inspired by @wild_friends. I love all their nut butters as they don’t contain palm oil & taste great!
Ingredients
- 1 cup almond flour
- ½ cup oat flour
- ½ cup nut butter
- 1 cup pumpkin purée
- 2 eggs
- ¼ cup liquid Lakanto sweetener
- 1½ teaspoon pumpkin spice
- ¼ teaspoon salt
- 1¼ teaspoon baking soda
- 1 teaspoon vanilla extract
Instructions
- Mix peanut butter, pumpkin purée, eggs, sweetener and vanilla extract in a medium bowl.
- Add wet ingredients to dry ingredients.
- Line muffin tins with liners and divide batter. Bake 350F for 24 minutes or until toothpick inserted in the middle comes out clean.
