Smells Like Halloween Spirit. The perfect marriage of pumpkin purée & nut butter. These muffins are moist and so delicious. Recipe inspired by @wild_friends. I love all their nut butters as they don’t contain palm oil & taste great!

Ingredients
  

  • 1 cup almond flour
  • ½ cup oat flour
  • ½ cup nut butter
  • 1 cup pumpkin purée
  • 2 eggs
  • ¼ cup liquid Lakanto sweetener
  • teaspoon pumpkin spice
  • ¼ teaspoon salt
  • teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions
 

  • Mix peanut butter, pumpkin purée, eggs, sweetener and vanilla extract in a medium bowl.
  • Add wet ingredients to dry ingredients.
  • Line muffin tins with liners and divide batter. Bake 350F for 24 minutes or until toothpick inserted in the middle comes out clean.
