Who likes guac? Guacamole is my daughters’ favorite after-school snack. Avocados are full of nutrients and mono-saturated fats. What I love about red onions is that they are packed with vitamin C and give a lot of flavor. Instead of chips, I opted for a more healthy version accompanied by crudités.

Ingredients
  

  • 4 ripe hass avocados
  • 3 tablespoon freshly squeezed lemon juice (1 lemon)
  • ½ cup small-diced red onion (1 small onion)
  • 1 large garlic clove minced
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 red pepper seeded and diced
  • Crudités to scoop it up

Instructions
 

  • Cut the avocados in half, remove the pits and scoop the flesh out into a large bowl.
  • Immediately add the lemon juice, onion, garlic, salt and pepper and toss well.
  • Mash up the mixture.
  • Add the red pepper.
  • Mix well and taste for salt and pepper.
  • Serve with crudités.
