Guacamole
Guacamole
Who likes guac? Guacamole is my daughters’ favorite after-school snack. Avocados are full of nutrients and mono-saturated fats. What I love about red onions is that they are packed with vitamin C and give a lot of flavor. Instead of chips, I opted for a more healthy version accompanied by crudités.
Ingredients
- 4 ripe hass avocados
- 3 tablespoon freshly squeezed lemon juice (1 lemon)
- ½ cup small-diced red onion (1 small onion)
- 1 large garlic clove minced
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 red pepper seeded and diced
- Crudités to scoop it up
Instructions
- Cut the avocados in half, remove the pits and scoop the flesh out into a large bowl.
- Immediately add the lemon juice, onion, garlic, salt and pepper and toss well.
- Mash up the mixture.
- Add the red pepper.
- Mix well and taste for salt and pepper.
- Serve with crudités.
