Piña Colada

My version of a winter cocktail. I call it dessert in a glass. When you live in the tropics you make Piña Coladas. It’s 80F today here in South Florida. This festive cocktail will teleport you to a white sandy beach complete cabana boy included.

Ingredients
  

  • 7 ounces cream of coconut
  • 1 cup pineapple juice
  • ½ cup fresh pineapple chunks
  • ½ tablespoon brown sugar
  • 2 cups ice
  • 3 to 4 ounces rum

Instructions
 

  • Add cream of coconut, pineapple juice, pineapple chunks, sugar, ice, rum in blender.
  • Blend the mixture until smooth.
  • Pour mixture into a cocktail glass and top with whipped cream.
  • Garnish drink with cherry and pineapple wedge. Makes 2 servings.

Notes

Garnish with whipped cream, pineapple wedge and maraschino cherries!
