Are you looking for an easy one-skillet meal? For those days a frittata for four finished off in the oven is the way to go. I hate slaving over the oven making individual omelets, this is way easier. Add a side salad or greens beans and you have a nutritious meal for your family. I love using fresh dill from my garden.

Ingredients
  

  • 4 slices turkey bacon, diced
  • 1 large potato, diced
  • 1/4 cup chopped scallions
  • 6 eggs
  • 2 tablespoons cream or milk of choice
  • 4 ounces of Swiss cheese
  • salt & pepper to taste
  • fresh dill from my garden

Notes

1. Preheat oven to 350F.
2. Dice up potato and bacon. Cook bacon on medium heat until browned. Drain bacon on paper towel.
3. Use the same pan to sauté potatoes until golden brown circa 10 minutes.
4. In a bowl whisk eggs, cream, salt/pepper. Add in scallions and shredded cheese. When the potato is soft add the bacon and pour in the egg mixture.
5. Place pan in the oven for 15-18 minutes until the frittata puffs and the eggs are almost cooked in the middle.
