Banana & Peanut Butter Chip Muffins

What are your Sunday rituals? I love baking with my minis. It’s our special bonding time in the kitchen. Maxine wanted to make peanut butter/banana muffins. They came out moist, light and muy delicioso! Hope you try them at home.

Ingredients
  

  • ½ cup olive oil
  • 2 eggs
  • cup flour
  • cup coconut sugar (whatever sugar you like)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • cups mashed bananas (3-4 bananas)
  • 1 cup peanut butter chips @nestletollhouse
  • ½ cup peanut butter @maranathanutbutters

Instructions
 

  • Preheat oven to 400F and line muffin pan with liners.
  • Measure the olive oil into a large bowl & beat in the eggs.
  • Add the flour, baking powder & baking soda into a large bowl & mix in the liquid ingredients, lastly add in the bananas & nut butter.
  • Fold in the peanut butter chips. I use an ice cream scoop to divide the batter into each muffin cup. The muffins will come out the same size.
  • Bake for 20 minutes. Enjoy.

This is another recipe I know to get similar results. Just in case 😉

    OMG! I’m always finding excuses to avoid baking, but these muffins are demanding I get back to the oven and make them.
