Banana & Peanut Butter Chip Muffins
What are your Sunday rituals? I love baking with my minis. It’s our special bonding time in the kitchen. Maxine wanted to make peanut butter/banana muffins. They came out moist, light and muy delicioso! Hope you try them at home.
Ingredients
- ½ cup olive oil
- 2 eggs
- 1½ cup flour
- ⅓ cup coconut sugar (whatever sugar you like)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1½ cups mashed bananas (3-4 bananas)
- 1 cup peanut butter chips @nestletollhouse
- ½ cup peanut butter @maranathanutbutters
Instructions
- Preheat oven to 400F and line muffin pan with liners.
- Measure the olive oil into a large bowl & beat in the eggs.
- Add the flour, baking powder & baking soda into a large bowl & mix in the liquid ingredients, lastly add in the bananas & nut butter.
- Fold in the peanut butter chips. I use an ice cream scoop to divide the batter into each muffin cup. The muffins will come out the same size.
- Bake for 20 minutes. Enjoy.
This is another recipe I know to get similar results. Just in case 😉
