Avocado Stuffed with Mixed Vegetables

This Peruvian dish makes for a delicious appetizer for NYE. It’s called Palta Rellena con Verduras or avocado stuffed with mixed vegetables. If you don’t care for mixed veggies you can use tuna or chicken with mayonnaise instead. My beloved Mama used to make it for dinner when she didn’t feel like cooking. Can we talk about that yolk? Ingredients
  

  • 3 avocados
  • 2 cups vegetables (peas, carrots, corn, green beans)
  • 1 boiled egg sliced
  • 1/3 mayonnaise
  • salt and pepper to taste
  • lettuce

Notes

1. Cook mixed vegetables in a pan until al dente, let cool and add mayonnaise in a bowl. Mix well.
2. Peel and slice the avocado in half. Add salt and pepper to taste.
3. Stuff avocado with mixed vegetables.
4. Decorate with boiled egg and bib lettuce.
