What is better than al fresco lunch, poolside? I love blistered tomatoes in a salad as they add the perfect sweetness from the caramelization. Add a nice piece of salmon or seabass and you have a lovely meal for your family.
Equipment

Ingredients
- 1 pint cherry tomatoes
- 2 eggs
- 1/2 cup strawberries
- 1/2 cup cauliflower
- 1 head bibb lettuce
Instructions
- 1. Turn oven to 400F.2. In a small bowl add tomatoes, olive oil, garlic, and salt/pepper.3. In a sheet pan place the tomatoes and roast for 15-20 minutes until they caramelize.
