Strawberry Muffin

Have a muffin but make it healthy. This strawberry muffin is only 155 calories. Store-bought muffins are loaded with sugar and up to 700 calories per muffin! My strawberry muffins are delicious and will satisfy you until lunchtime. You can also make them with blueberries. Try them with your favorite fruit or Greek yogurt. What is your favorite breakfast? Ingredients
  

  • 1 cup egg
  • 1 1/2 cup almond milk or skim
  • 1/3 cup of oil
  • 1 teaspoon vanilla
  • 1 1/4 cup all-purpose flour
  • 1 cup wheat flour
  • 1/2 cup monkfruit sweetener
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon
  • 1 cup fresh or frozen strawberries, sliced

Notes

1. Whisk together the egg, milk, oil and vanilla.
2. Combine remaining ingredients, except strawberries, in a large bowl.
3. Add liquid ingredients to the flour mixture and stir until just mixed. Fold the strawberries in.
4. Spray 12 cups of a muffin tin with cooking spray. Divide batter evenly among cups and a slice of strawberry on top. Bake at 400F for 25 minutes.
