Parmesan Scallops | Conchitas a la Parmesana

Parmesan scallops (aka conchitas a la parmesana) is one of my favorite childhood dishes. What makes them so delicious is the dollop of butter and melted cheese on top. My Peruvian mom used to make it as an appetizer for her fancy dinner parties. My girls love that it is served on a beautiful shell. You can find the shells at Michael's. Peru has been blessed with the freshest and most diverse seafood in the world.

Ingredients
  

  • 3 dozen small scallops
  • 2 cups of cheese
  • worcestershire sauce (optional)
  • salt and pepper
  • limes

Instructions
 

  • In a bowl rinse and pat dry the scallops. Salt and pepper to taste.
  • Add worcestershire sauce to taste.
  • Add scallops to shells and place on a baking sheet.
  • Cover each shell with parmesan cheese and cubes of butter.
  • Heat oven to 350F and bake for 10 minutes until cheese melts.
  • Squeeze lime wedges.
