Gluten Free Chocolate Chip Pancakes
I miss going out to brunch, so I decided to make the weekend breakfast extra special. These pancakes are airy and delicious. My girls added @yummallo unicorn mix for extra sparkle and fun.
Ingredients
- 1½ cups GF flour or regular flour
- 1 teaspoon salt
- 3½ teaspoon baking powder
- 2 tablespoon sugar
- 1 cup lactose-free milk
- 2 teaspoon apple cider
- 1 tablespoon ground flaxseed (optional)
- ½ cup water
- 3 tablespoon canola oil
- ½ teaspoon vanilla extract
- 1 cup dark chocolate chips
- ½ cup sprinkles (optional)
- Maple syrup
Instructions
- In a large bowl sift together all the dry ingredients. Make a well in the middle. Measure the milk in a separate bowl and add vinegar & flaxseed. Use a fork to mix ingredients until foamy.
- Pour the milk into the well. Add the water, oil, and vanilla and use a fork to incorporate ingredients. Add chocolate chips & sprinkles. Don’t overmix!
- Preheat a small pan on medium/low heat and spray with cooking spray. Let the batter rest for 10 minutes!
- Add 1/3 cup batter to the pan and cook for 4 minutes, until puffy. Flip the pancake and cook for another 2/3 minutes.
- Serve on a plate and add maple syrup and fruit.
Notes
Recipe makes 6 pancakes!
