Gluten Free Chocolate Chip Pancakes

I miss going out to brunch, so I decided to make the weekend breakfast extra special. These pancakes are airy and delicious. My girls added @yummallo unicorn mix for extra sparkle and fun.

Ingredients
  

  • cups GF flour or regular flour
  • 1 teaspoon salt
  • teaspoon baking powder
  • 2 tablespoon sugar
  • 1 cup lactose-free milk
  • 2 teaspoon apple cider
  • 1 tablespoon ground flaxseed (optional)
  • ½ cup water
  • 3 tablespoon canola oil
  • ½ teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • ½ cup sprinkles (optional)
  • Maple syrup

Instructions
 

  • In a large bowl sift together all the dry ingredients. Make a well in the middle. Measure the milk in a separate bowl and add vinegar & flaxseed. Use a fork to mix ingredients until foamy.
  • Pour the milk into the well. Add the water, oil, and vanilla and use a fork to incorporate ingredients. Add chocolate chips & sprinkles. Don’t overmix!
  • Preheat a small pan on medium/low heat and spray with cooking spray. Let the batter rest for 10 minutes!
  • Add 1/3 cup batter to the pan and cook for 4 minutes, until puffy. Flip the pancake and cook for another 2/3 minutes.
  • Serve on a plate and add maple syrup and fruit.

Notes

Recipe makes 6 pancakes!
