Chocolate Chip Cookies
Maxine and I made white chocolate chip cookies. They are sultry, decadent and full of fudge. In times like these we all need extra sparkle and chocolate, don’t you think? I love school breaks as that means: no school runs, homework or tight schedules. Just family time and lots of baking.
Ingredients
- 1/2 cup vegetable oil
- 3/4 cup sweetener @swervesweetie
- 1/4 cup molasses @grandmasmolasses
- 1/4 almond milk
- 2 teaspoon vanilla extract
- 1 2/3 cups all-purpose flour @bobsredmill
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground ginger
- 1/4 teaspoon ground cloves
- 1 cup white chocolate chips @nestletollhouse
Notes
1. Preheat the oven to 350F and line two baking sheets with parchment paper.
2. In a bowl mix oil, sugar, molasses and milk. Mix until you get a caramel color. Add vanilla extract.
3. Sift in all dry ingredients. Mix well and add chocolate chips.
4. Roll dough into small disks and flatten into 2 inch rounds. Ensure 2 inches between your dough balls. Bake for 10-12 minutes. Let cool for 5 minutes and transfer to cooling racks.
