Carrot Ginger Soup
A cold carrot ginger soup it is today! Florida’s vaccine rollout is a hot mess, so until I get vaccinated I am paying extra attention to my diet in an effort not to get sick. I am adding ginger to everything as it’s known to boost your immune system and stave off colds or flu. This soup is simply to make, tasty and filling. Added pine nuts for a bit of crunch.
Ingredients
- 4 cups chicken broth
- 6 large carrots, sliced
- 1 large onion, sliced
- 2 cloves of garlic, minced
- 2 tablespoon finely minced ginger
- salt, pepper to taste
Notes
1. Combine in a large pot, broth, carrots, onion, garlic and ginger. Cover and bring to a boil, then simmer partially covered for 15 minutes and stir occasionally.
2. Blend in @vitamix until it's smooth. Add salt & pepper to taste. I also like to add paprika optionally.
This recipe makes 6 cups. 75 calories per one-cup serving.
