What’s more fun than Taco Tuesday? My kids love taco night as I set up a serving station and making it a fun and interactive experience. This Peruvian cilantro sauce is creamy and delicious. I love using the cilantro sourced from my garden. I use it on everything from eggs to rice/quinoa or seafood. It stores well in the fridge for up to a week. Pour this gorgeous sauce on your tacos pair it with a glass of vino or a margarita and enjoy. Que no pare la fiesta! What is your favorite taco?
Ingredients
Cilantro Sauce
- 2 cups cilantro
- 1/2 cup Greek yogurt
- 3 or 4 cloves of garlic
- Kosher salt/pepper to taste
- 1/4 teaspoon cumin
- 1/4 cup olive oil
- 1/4 fresh lemon juice
- 1 jalapeño pepper (unseeded) if you like
- salt to taste
Tortillas
- 4 chicken breasts
- olive oil
- salt/pepper to taste
- 1 cup shredded gruyere cheese (cheese of your liking)
- queso fresco
- 8 mini corn tortillas
Notes
Blitz all ingredients for the Cilantro Sauce in your blender. Blend for a minute or two depending on the consistency you desire. I like this green sauce to be creamy.
In a pan coated with olive oil sear chicken (or pork) on both sides until reaches (internal 160F). Cube up your chicken. You can of course shred it but Alexis likes it this way. Heat up corn tortilla with gruyere cheese on the stovetop. Assemble taco to your heart's desire. I like to add red peppers and avocado & pour lots of cilantro sauce on top. Que no pare la fiesta!
